Escalivada
The aubergine is a typical Catalan dish consisting of roasted vegetables: eggplant, pepper, onion and tomato, has its origins in rural communities. It is a dish low in calories and high in fiber.
The escalivada can be eaten alone or as an accompaniment, a common form of delivery is on a piece of bread with some anchovy fillets.
